ChitosanChitinName: Chitin
Molecular formula: (C8H13NO5) n
Chemical name: β -1, 4-poly-N-acetyl-D-glucosamineCharacter: Off-white, innocuous, flavourless semitransparent and amorphous solid. Insoluble in water, dilute acid, dilute alkali.
Applications: Widely existing in shell of shrimp and crab, insect shell, fungi cell and water plant's cell wall.
